When it comes to sweets, I have very little control. If it’s there, I’m likely going to eat it. This is why I like to come up with healthier versions of my favorite desserts, so that I can enjoy them often without regretting it afterwards.

No bake energy balls are super simple to make and usually made one of two ways. To make an energy ball that’s going to keep its shape, you need a binder. Usually this binder is either Medjool dates or some kind of nut butter.

For this no bake energy ball recipe, we are using a base of Medjool dates to naturally sweeten the key lime pie energy balls. Cashews, coconut flakes, lime juice and lime zest are the “filling” and provide a good source of healthy fats to each bite. Ground flaxseed is added for heartiness and a boost in fiber.

You can make these key lime pie energy balls and store them in the refrigerator for a few weeks, or the freezer for a few months to have on hand when you need a little pick-me-up.

Description

You won’t believe how good these No Bake Key Lime Pie Energy Balls are, not to mention, how good they are for you. They are naturally sweetened with Medjool dates and balanced with healthy fats from cashews. Of course, there’s still plenty of tang with fresh lime juice and zest!

  1. Add all of the ingredients to a food processor and pulse until the dates and cashews are finely chopped and the mix begins to stick together. Scoop the mix out with a cookie scoop to form into bite-sized balls. Store in an airtight container in the refrigerator for up to a few weeks or the freezer for up to a few months.

Notes

To make these into bars, place a piece of parchment paper in the bottom of a square baking dish. Add the mix on top of the parchment paper and press into the bottom of the pan, spreading all the way to the edges and the corners. Top with extra coconut flakes and lime zest, if desired. Press the topping into the mix. Place in the freezer to harden for a few hours before cutting into bars.
